As a freelancer, giving your clients options will give them access to choose how to work with you rather than making them feel obliged to work with you. It is always better you give them the chance of them wanting to work with you. With that, it makes it easier for you to negotiate and even bargain the price. When you are the one that want them to with you, you are giving them the upper hand above you. There is also a chance of compromising.
