In the early days, you want to check whether Google is even finding your pages, which you can do through Google Search Console. After that, look at how many pages are getting indexed and whether any of them are starting to appear in search results. Organic clicks and impressions matter more than social traffic at this stage. You also want to track which keywords are bringing people in so you can create more content around those topics.
