From what I have seen, saying yes to every job sounds like a good business move but it usually causes more damage than good. When a freelancer takes on work they cannot handle well, the results show it, and the client remembers that far longer than they remember the initial enthusiasm. Being upfront about your limits is something most clients actually respect because it tells them you are serious about quality.
