There is no perfect number because every business is different, but running more campaigns does not always mean getting better results. Too many campaigns can spread the budget across too many places and make it harder to understand what is actually working. I usually think it is better to keep things simple at the beginning and only add more campaigns when there is a clear reason to do so. A cleaner account is often easier to manage and improve.
