I currently have a website hosted under the domain banana.com, and I'm planning to create a new website using the domain apple.com. However, I want this new site to use the original domain name, banana.com, instead of apple.com. My goal is to keep the branding and traffic associated with banana.com while updating the content. If I go ahead and build the new website on apple.com, and then transfer or point the domain banana.com to this new site (as described in some guides I've read), will banana.com effectively become the new site I created under apple.com? If that's the case, what happens to apple.com itself—does it stay active, become unused, or should I assign a different purpose or content to it?

You can definitely do that. Once you're done building the new site on apple.com, just point banana.com's nameservers or A record to the same host. Then, in WordPress settings, change the site address to banana.com. That way, banana.com will show the new content. Apple.com will stay active unless you redirect it elsewhere, so you can decide to keep it for testing, or even redirect it to banana.com if you like.
